meat and fish | duck with mango salad

Serves 4

Duck can often be seen as a fatty meat, but can be simply delicious when grilled and complemented with a healthy salad

Wheat free, dairy free, nut free version...

Ingredients...

Dressing:

Method...

  1. Grill the duck breasts under a high heat for 5-6 minutes per side.
  2. Allow to cool slightly then slice.
  3. Meanwhile, heat the oil in a wok, and stir fry the spring onions, halved cherry tomatoes and mango cubes for around two minutes.
  4. Mix the shreaded lettuce and sliced cucumber and arrange on a serving plate.
  5. Mix the dressing ingredients in a closed container and shake well.
  6. Place the duck onto the lettuce, add the onions, tomatoes and mango.
  7. Pour over the dressing and serve.

Maybe serve with...

Some baby new potatoes.

For those able to eat fish ...

The duck could successfully be replaced by a white fish, though personally I would then leave out the mango.

For those able to eat wheat...

Instead of the lettuce/cucumber base, the duck could be laid on a bed of cous cous for a more substantial meal

If you have mango and spring onions leftover, see the mango pepper boats. If you have cherry tomatoes leftover, see the quick fling pasta, the Mediterranean skewers, 'nude' roasted squash and red onion medley, fish drizzled with warm tomato vinaigrette and seared tuna with sun blush tomato and olive dressing.
