meat and fish | quick chic salmon

Serves 2

This is incredibly quick and easy. And it's really tasty and nutritious too.

Wheat free, dairy free, nut free version...

Ingredients...

Method...

  1. If serving with salmon fillet, cook either by baking in the oven for 15-20 minutes on a medium-high heat in a foil parcel, or quickly pan fry for several minutes on each side - depending on the thickness of fillet.
  2. Mix the chicory, apple and walnuts in a bowl.
  3. Mix the dressing together, shake, drizzle over the salad and coat thoroughly.
  4. Then you can either stir in the tin of salmon or fillet of salmon - or serve the fillet or smoked salmon separately.

Maybe serve with...

This is delicious on its own as a light supper, or with some new potatoes.

For those able to eat dairy ...

You can substitute the salmon for some chunks of cheese. A smoked cheese works really well. Smoked applewood cheddar is especially lovely, but just use whichever cheese you prefer. Alternatively, you could serve the salad with a selection of cheeses.

For those able to eat wheat...

Serve with thin slices of wholemeal bread and butter (or non-dairy spread) instead of the potatoes.

For those who can eat meat...

Add strips of cooked chicken (and cheese, if you wished) to the salad instead of salmon. Or serve the salad without salmon, and instead serve with toasted bread and pate.
