meat and fish | rustic country chicken

Serves 2-4, depending on whether it is served with a side dish or alone

A meal to be eaten after a long walk together along a winter beach, breathing in the cold salty air - its even better if you can persuade someone else to stay at home and cook this for you to come home to!

Wheat free, dairy free, nut free version...

Method...

  1. Halve the potatoes & boil in salted water until just cooked.
  2. While they are cooking, heat the oil and sauté onion far 2 minutes.
  3. Add the chicken pieces, bacon, garlic, mushrooms, tomatoes and a sprinkling of salt and pepper & cook for a further 5 minutes.
  4. Add the just cooked potatoes and the rosemary and continue to cook for a further 10 minutes, turning occasionally - the chicken will turn a lovely golden colour.
  5. If there's any wine left after you have helped yourself (cooks privilege!) then add a drop here and continue to cook until it has reduced

Maybe serve with...

Even though this has some potatoes in the ingredients, I still like to serve this with a side serving of rice.

For those able to eat fish ...

Any firm white fish could be used

For those able to eat dairy ...

Add a little knob of butter to the oil when cooking the meat.
