miscellaneous | gorgeous health-bursting bean cous cous!

Serves 4 as a side dish or lunch

Broad beans arrived in the veg box this morning and I looked at them and thought, what the heck am I going to do with you! I don't cook broad beans very often. I am not sure why, because when I do, I think "that was scrummy!" This dish is gorgeous and really bursting with goodness. The alfa alfa sprouts add a gentle crunch and the broad beans are just so juicy! The tomatoes add a little bit of a zing and the Tamari isn't noticeable in the dressing, but it adds a little je ne c'est quoi! (if the write up is enthusiastic, it's because I've got a lovely glass of red wine in hand and feel fabulous after a divine feast which included this dish!).

NOT WHEAT FREE( but you can substitute rice), dairy free, nut free, meat free version...

Method...

  1. In a jug, add the boiling water to the cous cous, add some salt, stir, cover with a tea cloth and let it do its thing.
  2. In a pan (a BIG one!) put the broad beans in their pods, cover with water and boil for 5-10 minutes.
  3. Put the dressing ingredients in an old jar or container and shake well.
  4. Put the tomatoes, alfa alfa and dressing in a bowl and mix well.
  5. When the broad beans are ready, cut the pods and take the beans out - mine end up watery inside the pod (I have no idea why) so I shake off excess water and/or blot dryer.
  6. Add to dressed tomatoes.
  7. Fluff the cous cous with a fork to separate it and add it to the bowl - you can do the fluffing part in the bowl if you wish!
  8. Stir and serve whilst still warm - yummy!

Maybe serve with...

This is gorgeous with a crisp salad and/or potato or pasta salad for lovely summer evenings - and it's ideal cold for picnics.
