miscellaneous | baked goat's cheese bites with beetroot confetti

Serves 2

For those of you who can eat goat's cheese, this works brilliantly and was inspired by a dish seen in a lovely hotel in the wilds of Wales just outside Usk.

Wheat free, nut free, meat free version...




  1. Heat the oven to 170°C.
  2. Lay the ciabatta slices on a baking tray and top with the cheese.
  3. Bake for 5-7 minutes or so, until cheese is melting and starting to brown on the edges.
  4. Mix the dressing ingredients, shake and coat the salad leaves. Divide the leaves between 2 plates.
  5. When ready, nestle the slices on the leaves and scatter with beetroot and cherry tomatoes.
  6. Season with black pepper and serve immediately

This is a lovely light supper on its own.

For those able to eat wheat...

Use wheat-based ciabatta.
