miscellaneous | minted sugar snap peas

Serves 2-4

This is very quick and easy to do as a side dish. The stir frying means the sugar snaps stay crunchy too.

Wheat free, dairy free, nut free, meat free version...

Method...

  1. Heat the oil in a pan.
  2. When hot, add the sugar snap peas for a minute or two.
  3. Toss the mint in and stir well.
  4. Serve.

These are gorgeous with salmon croquettes, pepper paprikash, mushroom provençal or any of the casseroles.

For those able to eat dairy ...

Use butter instead of oil and squeeze a little lemon juice in too.

For those able to eat meat...

Cook some bacon strips until crispy, then add the sugar snaps but not the mint. Or stir into a salad with asparagus and some lovely ham

If you have mint leftover, use with the divine chocolate pots or Mommy Morgan’s tabbouleh.
