miscellaneous | caramelised onion and chilli relish

Serves 2-4

This is a beautiful relish, which is superb with many things. Often, the shop-bought versions contain butter - so this is worth making.

Wheat free, dairy free, nut free, meat free version...

  1. Caramelise the onion, garlic shallots and chilli for 1 hour in the oil and sugar.
  2. Add the garlic puree and balsamic and heat through gently.

This is a gorgeous accompaniment for lots of things, on top of a jacket potato, stuffed tomatoes with goat's cheese, with a salad...

For those able to eat fish ...

Ideal with smoked salmon and new potatoes and a salad.

For those able to eat wheat...

Make a toasted salmon or goat's cheese sandwich with relish as a quick supper.

For those who can eat meat...

Add a tbsp into meat stews to give extra flavour .

If you have garlic puree, onions and or shallots left, see the mushroom provençal, the Italian beef stew, cod with caramelized onions. If you have chilli left, see the mango pepper boats and the bean chilli.
